Marshmallow Brownie Cookies

Marshmallow Brownie Cookies are a hot cocoa dream! These chocolate cookies are rich, moist, and fudgy like a brownie. The chewiness pairs perfectly with sweet and fluffy mini marshmallows. The cookie is finished with a drizzle of melted chocolate for extra decadence! I know you want one.  Do you ever feel like chocolate chip cookies just don’t have enough chocolate? When I first began to create the recipe for this chewy cookie I started with a chocolate cookie dough made from scratch.  I was not too fond of the taste the cocoa powder left behind, or something.  So, after 2 previous failed attempts at the perfect chocolate cookie (and lots of cookie dough tossed in the trash),  I now have the perfect chocolate cookie with perfect chocolate flavor.

This recipe starts with a brownie mix and they are amazing, to say the least!  If you like chocolate or brownies you will love this cookie (and I mean come on who doesn’t like chocolate and brownies? It even reminds me of those amazing chocolate-covered marshmallows that I love.  This recipe is a must-try!  These cookies are luxurious!

Marshmallow Brownie Cookies

Ingredients for Marshmallow Brownie Cookies

  • Boxed brownie mix
  • All-purpose flour
  • Light brown sugar
  • Salt
  • Eggs
  • Milk
  • Unsalted butter
  • Mini marshmallows
  • Semisweet chocolate chips

As always, my instructions are to carefully whisk dry ingredients together to be sure all ingredients are distributed evenly. (Too much baking soda in some of the cookies mean uneven rising and baking.)

Use a paddle attachment in the bowl of a stand mixer to cream the butter and sugar, mixing wet ingredients before you slowly incorporate dry ingredients. I always use a cookie scoop to get evenly sized-cookie dough balls, then place them on parchment paper or a silicone mat on the baking sheet. You can chill your dough for easier shaping, too.

Chocolate Cookie Remixes

You know I can never leave a recipe alone! Every recipe also includes my dreams and visions for ways to remix it for different flavor profiles and seasons. There are a few ideas I had for trying this cookie in new ways. If you love a rich, dark chocolate taste, you can add a tiny bit more Dutch-processed cocoa powder (dutch-process may not be carried at your local grocery store, but is usually at a more fancy grocery store in your area). Natural cocoa powder works too, but isn’t quite as deep. You can also add dark chocolate chunks for part of the chocolate chips in your ingredients.

Marshmallow Brownie Cookies

  • Preheat oven to 350 degrees. Butter a cookie sheet and set aside. In a large mixing bowl, whisk together brownie mix, flour, brown sugar and salt. Add in eggs and milk and stir with a large spoon. Add in melted butter and vanilla and stir until well blended. 
  • Spoon dough by heaping tablespoonfuls onto greased cookie sheet (you can fit 12 per sheet). Bake for 9 minutes and remove from oven and top each cookie with about 6 - 7 marshmallows (you may have to push down on the marshmallows slightly to keep them from rolling off). 
  • Move oven rack near the top of the oven and return cookies to oven to bake 2 more minutes until marshmallows soften. Remove from oven and set cookies aside. In a small microwave safe mixing bowl combine chocolate chips, butter and water. 
  • Microwave chocolate on 50% in 30 intervals stirring after each interval until melted and smooth. Pour mixture into a small ziploc bag. Cut a small tip off the end and drizzle over marshmallow brownies cookies. Store cookies in an airtight container.

    what is packed light brown sugar? are those the cubed ones? and is there a difference if i use the granulated kind?

      Packed light brown sugar is basically granulated sugar with molasses added to it and then in the recipe it’s labeled as ‘packed’ because when you measure it you pack it into the measuring cup. In the US you can find it near the granulated sugar in the baking isle of the grocery store. If you are unable to find it you can blend a 3/4 tsp molasses with 1/4 cup granulated sugar and blend well with a fork, BUT since this recipe only calls for 1/4 cup you can just substitute granulated sugar =).
